Morphology

Colonies of Saccharomyces grow rapidly and mature in three days. They are flat, smooth, moist, glistening or dull, and cream to tannish cream in color. The inability to use nitrate and ability to ferment various carbohydrates are typical characteristics of Saccharomyces.
