Lactols can participate in a variety of chemical reactions including:
- Oxidation to form lactones
- Reaction with alcohols to form acetals
- The reaction of sugars with alcohols or other nucleophiles leads to the formation of glycosides
- Reduction (deoxygenation) to form cyclic ethers
