Cashew chicken (Chinese: 腰果鸡丁) is a simple Chinese-American dish that combines chicken, (usually stir-fried but occasionally deep-fried, depending on the variation), cashews, and a thick sauce made from chicken stock, soy sauce and oyster sauce.
