Advanced meat recovery (AMR) is a slaughterhouse deboning process by which the last traces of skeletal muscle meat are removed from animal bones after the primal cuts have been carved off manually.
The machinery used in this process separates meat from bone by scraping, shaving, or pressing the meat from the bone without breaking or grinding the bone. Products produced by advanced meat recovery machinery can be labeled using terms associated with hand-deboned product (i.e., "beef", "pork", "beef trimmings", etc.). AMR meat typically is used as an ingredient in products requiring further processing, such as hot dogs.
This meat is comparable in appearance, texture, and composition to meat trimmings and similar meat products derived by hand.
USDA regulations for procurement of frozen fresh ground beef products state that "Beef that is mechanically separated from bone with automatic deboning systems, advanced lean (meat) recovery (AMR) systems or powered knives, will not be allowed".

Famous quotes containing the words advanced, meat and/or recovery:
“I saw my lady weep,
And Sorrow proud to be advanced so
In those fair eyes where all perfections keep.
Her face was full of woe;
But such a woe, believe me, as wins more hearts
Than Mirth can do with her enticing parts.”
—Unknown. I Saw My Lady Weep (l. 16)
“Firm-style bean curd insoles cushion feet, absorb perspiration and provide more protein than meat or fish innersoles of twice the weight. Tofu compresses with use, becoming more pungent and flavorful. May be removed when not in use to dry or marinate. Innersoles are ready to eat after 1,200 miles of wear. Each pair provides adult protein requirement for 2 meals. Insoles are sized large to allow for snacks. Recipe booklet included.”
—Alfred Gingold, U.S. humorist. Items From Our Catalogue, Tofu Innersoles, Avon Books (1982)
“Walking, and leaping, and praising God.”
—Bible: New Testament Acts, 3:8.
Referring to the miraculous recovery of a lame man, through the intervention of Peter.
