List of Kebabs - China

China

  • Uyghur: Kewap, Chinese: 串儿 Chuanr or 羊肉串 Yangrouchuan - The most popular Xinjiang dish in China, being chunks of mutton or mutton fat pierced on metal (or wood or bamboo) skewers, grilled on a coal-fired barbecue, and served with cumin and chili paste. Across Xinjiang, and neighbouring regions such as Kyrgyzstan, the mutton fat is valued equivalent to or more than the meat itself, as it provides sufficient energy during the harsh winter months. It has also become a popular street food all over North and West China, where a wide variety of foods are cooked in such a manner. Chuanr was traditionally made from lamb (yáng ròu chuàn, 羊肉串), which is still the most common, but now, chicken, pork, beef, and various types of seafood are also used. It is typically roasted over charcoal or electric heat, but It is sometimes also cooked by deep frying in oil (popular in Beijing).

Famous quotes containing the word china:

Anyone who tries to keep track of what is happening in China is going to end up by wearing all the skin of his left ear from twirling around on it.
    Robert Benchley (1889–1945)

Ever since I was a little girl, I’ve, I’ve dreamed of havin’ my own things about me. My spinet over there and a table here. My own chairs to rest upon and a dresser over there in that corner, and my own china and pewter shinin’ about me.
    Frank S. Nugent (1908–1965)

It all ended with the circuslike whump of a monstrous box on the ear with which I knocked down the traitress who rolled up in a ball where she had collapsed, her eyes glistening at me through her spread fingers—all in all quite flattered, I think. Automatically, I searched for something to throw at her, saw the china sugar bowl I had given her for Easter, took the thing under my arm and went out, slamming the door.
    Vladimir Nabokov (1899–1977)
