Locally known as a "private kitchen," or a "speakeasy," underground restaurants in Hong Kong were originally developed by cooks to avoid high commercial rents. Many new private kitchens have debuted in Hong Kong’s industrial areas such as Wong Chuk Hang, Kwun Tong and Kwai Chung, away from the high rents of the central business districts.
