James Cook was founded in 1957 after Moorefield racecourse was demolished and the ground was divided into housing development and two schools: Moorefield Girls High School and James Cook Boys Technology High School, and St George TAFE. James Cook had an opportunity to become a Sports High School but decided to become a Technology High School. Queen Elizabeth II visited the school in 1970 (the bicentennial year of Australia's discovery by James Cook) along with her husband Prince Philip, Duke of Edinburgh and Anne, Princess Royal.
