Sample Recipe For Traditional Financier
Makes about about 36 small cakes.
- 1/2 cup diced fruit or chopped almonds
- 11 tablespoons unsalted butter for the beurre noisette
- 1 cup granulated sugar
- 1 cup all purpose flour
- 1 cup almond flour
- 5 large egg whites
- a pinch of kosher salt
- confectioner's sugar
Heat butter on low heat, stirring constantly until a brown sediment forms. Set aside to cool. Pour off the butter leaving the sediment behind.
Combine dry ingredients. Stir in the egg whites and the cooled beurre noisette gradually.
Spoon into molds or muffin forms.
Bake at 350°F for 20-25 minutes or until the tops are golden brown.
Cool and remove from molds. Dust with confectioner's sugar.
