Dealing With Boar Taint
The following method is used by Taiwanese restaurant chefs to reduce or remove boar taint.
1. Fill a large pot with at least enough cold water to cover the meat (defrosted.) The more water the better to avoid cooking the meat.
2. Heat the pot for 30 minutes at the lowest possible setting your stove can be set. You do NOT want to cook the meat at this point.
3. Discard the resultant bloody water and the scum from the pan. Remove the meat and rinse with cold water.
4. Repeat steps 1 to 3 once again.
5. Cook the meat by your preferred method.

Famous quotes containing the words dealing with, dealing, boar and/or taint:
“Since events are not metaphors, the literal-minded have a certain advantage in dealing with them.”
—Mason Cooley (b. 1927)
“Mediocre people have an answer for everything and are astonished at nothing. They always want to have the air of knowing better than you what you are going to tell them; when, in their turn, they begin to speak, they repeat to you with the greatest confidence, as if dealing with their own property, the things that they have heard you say yourself at some other place.... A capable and superior look is the natural accompaniment of this type of character.”
—Eugène Delacroix (17981863)
“Is a man too strong and fierce for society, and by temper and position a bad citizen,a morose ruffian, with a dash of the pirate in him;Mnature sends him a troop of pretty sons and daughters, who are getting along in the dames classes at the village school, and love and fear for them smooths his grim scowl to courtesy. Thus she contrives to intenerate the granite and the feldspar, takes the boar out and puts the lamb in, and keeps her balance true.”
—Ralph Waldo Emerson (18031882)
“And, beholding in many souls the traits of the divine beauty, and separating in each soul that which is divine from the taint which it has contracted in the world, the lover ascends to the highest beauty, to the love and knowledge of the Divinity, by steps on this ladder of created souls.”
—Ralph Waldo Emerson (18031882)
