The time to market of Eggology's products has been a distinguishing factor for the company. In the case of the egg white products, they are shipped within hours of the eggs initially being laid, with no storage period before processing. The safety of the main egg white product has also been a factor in increasing sales. A USDA inspector retains an office on the Eggology premises and the company's inspection routine significantly exceeds government mandates.

There are conflicting reports as to the position of Eggology in the organic egg products market. In a 2002 government report, the two major suppliers where noted as Primera Foods and Organic Valley without mentioning Eggology. However, in a 2006 ice cream industry report, Eggology is referred to as "the leading all natural egg white company". This apparent discrepancy may be due to the growth of the company over the intervening four years, as evidenced by the government report noting 2001 revenue as US$1.6 million while the company revenue for 2007 was more than five times this figure.
